Potluck to examine power of gluten-free diets

GREATER SPRINGFIELD On May 23 at 5 p.m., Teri Cummings will lead a seminar on "The Power Of Eating Gluten Free" at the Northern Connecticut Vegetarian's Potluck. Anyone interested in improving his or her health is invited.
Cummings knows first hand what it is like to be tired and sick all the time. Not too many years ago she was extremely sick, and things got so bad and even worse when she was diagnosed with multiple sclerosis (MS). She knew in her heart that there was more going on with her health and that she did not have MS so she decided to work on her diet. Within three days, her vision cleared up and she regained the use of the right side of her body.
Cummings is a Certified Holistic Health Coach, graduating from the Institute for Integrative Nutrition. She is also certified as a Lifestyle Educator with Metagenics and continues her education every day.
For the potluck, attendees should bring a healthy vegan dish to share with six people and its recipe. Vegan denotes no animal ingredients zero fish or honey or dairy products. Unroasted nuts or fruit/vegetable salads are always welcome. Also, please bring a place setting (cup, dish and utensils).
The event is at Carniglia Senior Center, 41 Oak St,, Windsor Locks, Conn.
