LONGMEADOW -- There is an on-going outbreak of salmonella infection across the United States that is epidemiologically-linked with the ingestion of eggs. As of Aug. 24, infected eggs do not appear to have been shipped to Massachusetts. However, the Longmeadow Board of Health recommends that residents who wish to obtain timely, continuously-updated information in regard to the identifying stamps on cartons linked to infected product refer to the following Web site: www.foodsafety.gov. Also, it is always very important to follow the following food safety procedures when purchasing eggs for consumption: - Refrigerate purchased eggs immediately. Do not store eggs at room temperature. It is recommended that consumers purchase raw eggs from dealers who refrigerate raw eggs.
- Eggs dishes should be cooked to proper temperature 145 degrees for a minimum of 15 seconds before eating. For enhanced food safety, eggs should be cooked until whites and yolks are firm.
- Prepared foods which contain eggs should also be thoroughly cooked.
