Springfield Frigo's to bring back popular cooking classes

SPRINGFIELD Have you always had a desire to learn the ins and outs of authentic Italian cooking?
Frigo's Gourmet Foods has just the classes for you!
Once again this winter, Frigo's is offering its popular cooking classes at the company's Williams Street location. Parking is right next to the store, well-lit and the class leaves as a group.
This year's classes will take place on four Monday nights: Feb. 2, 16, March 2 and 16. The March 2 class is already sold out.
All classes run from 6:30 to 9:30 p.m. The cost is $100 per student.
"It's a fun night out," Pam Reed, Frigo's catering and cooking class coordinator, told Reminder Publications. "You learn some tricks of the trade. Joe [Frigo] is really good about sharing his family history and how his grandmother prepared things . and of course, our chefs will show you the new way to do things."
Reed said all Frigo's cooking classes include a hands-on component but that attendees "aren't going to make everything."
"You do get to eat everything in the four-course menu for the night," she said. "It's a good deal."
In addition to the cooking demonstration and the meal, Reed said students go home with some goodies, courtesy of Frigo's.
"Joe supplies aprons and tote bags and a recipe book of the things we prepared that night and literature about the ingredients we used that night," she said. "You walk away with some things so you can replicate the food we made that night."
Reed said that there are still some openings in the Feb. 2 class, which will prepare artichokes Boursin, a spinach salad with pear and bleu cheese crumbles, braciole-stuffed steak with prosciutto and herbs, penne with marinara sauce and an orange ricotta panettone shortcake.
Menus for the remaining classes are as follows:
Feb. 16: chef's choice of appetizer, pasta fragiole soup, lasagna rolls with sausage and ricotta, bolognese sauce and fruit strudels.
March 16: asparagus cigars, escarole soup, chicken saltimbocca, risotto cakes with butternut squash and tiramisu.
